Kouvarakis Xigalo PDO Sitia
Xigalo is a soft fresh spreadable cheese traditionally made in the pretty harbour town of Sitia in Eastern Crete. It is made from the natural acidification of goat’s and sheep’s milk, with a little added salt and nothing else. Pure white in colour with a lovely grainy mouthfeel, it is perfect for spreading on crackers, for use in dips or salads. This traditional Cretan cheese was recongnised with a Protected Designation of Origin status in 2011.
The Greek word Xigalo is connected to the world oxygala, meaning acid-milk. This cheese is mildly acidic, which ads a fresh zing to any dish it is used in, and a big part of an authentic Cretan diet.

Kouvarakis, Sitia, Crete
Ioannis Kouvarakis opened his first shop in Sitia, Crete, in 1977. In 2004, his sons took over and created a modern dairy while upholding respect for tradition. Their milk is sourced from Lasithi and Zakro, which contributes to the excellent quality and taste of their products, particularly the soft, spreadable Xigalo Sitias, a uique PDO cheese.
